Recipe: Rich Vanilla Cupcakes

I think I've blogged a recipe for vanilla cupcakes before, but who cares, there's never, ever such a thing as too much cake! Whilst Jamie napped this morning, my Mum and I whipped up a batch, along with some rather failed, burnt oat and raisin biscuits...but the less said about those the better!


You'll need:
175g self raising flour
pinch of salt
125g unsalted butter, softened
175g caster sugar
2 large eggs, at room temp
1/2tsp vanilla extract
3tbsp semi skimmed milk, at room temp
Method:
Preheat the oven to 180. Sift the flour and salt into a bowl. Put the butter into another mixing bowl and beat until pale with a wooden spoon or electric mixer. Gradually beat in the sugar, then beat until light and fluffy. Beat the vanilla and eggs together, then add to the creamed eggs and sugar. Gradually add in the flour and milk, alternately. Beat everything a little bit more until really well combined. Spoon the mixture into muffin cases (should make approx. 12), and pop in the oven for 20 minutes, until golden brown and firm to the touch. Once baked remove from the oven and put onto a wire rack to cool. Once cool you can decorate these however you wish, we opted for buttercream icing, PLENTY of sprinkles and some chocolate buttons. Eat and enjoy :)
